Los Pollos Hermanos is a small chain of chicken restaurants run by Gus Fring. It also serves as a cover for his meth production & supply operation.
When Walt & Jesse's RV meth lab is destroyed, a third party arranges for Walt to meet with Gus to discuss setting up another meth lab.
The initial meeting fails because Gus has doubts and concerns about the situation. Walt does not give up, though, and goes back to the restaurant and waits until Gus finally agrees to speak with him.
